Choice of Appetizer or SaladConfitado De PatoRavioli filled with duck confit, stewed leeks and New Mexico goat cheese Pan roasted. Served with roasted poblano cream.
Flan De CangrejoSliced yams and Dungeness crab in a roasted garlic custard topped with a crab salad and chive oil.
Ensalada De La CasaCrispy romaine hearts tossed with queso cotija Caesar dressing, and garnished with red onion, garlic croutons, cotija cheese and Roma Tomatoes.
Sopa De TortillaA dark guajillo chicken broth with shredded chicken, avocado, queso fresco, fried tortilla strips and lime.
Choice of EntréePolloFree range chicken breast, filled with New Mexico goat cheese, oyster mushrooms and roasted garlic, wrapped in jamon Serrano and roasted. Served with white truffle-lavender honey demi glace, Anasazi bean ragout and fresh seasonal vegetables.
Sockeye SalmonPan seared line caught Alaskan salmon fillet, accompanied by mango-citrus syrup, sautéed baby spinach and crispy bacon and smoky chipotle-buttermilk mashed potatoes.
Filet y EnchiladasChar-grilled petite filet mignon and two yellow corn cheese enchiladas. Choice of red or green chile. Served with pinto beans or black beans, pork posole, guacamole, sour cream, lettuce, tomatoes & sopaillas.
